Made a dish for dinner time tonite and it turned out rather tasty, so thought I should record it! XD

Ingredients:
Spring onions, about a couple sticks, washed
Garlic 1-2 cloves
Fresh ginger
A table spoonful of teriyaki sauce, (or if you don't have it at hand, a solution of light soya sauce with a teaspoon of sugar and about quater cup of water)
half a boneless chicken breast, sliced thinly um probably like, against the grain?
Directions:
1. Marinate chicken breast slices with a splash of light soya sauce, a sprinkle of sugar, a dash of white pepper (black pepper is fine too), a drizzle of sesame oil(optional but will make chicken smell good
) and a teaspoon of corn starch, mix well and set aside. (about 15-20 minutes, you can use this time to wash/cook rice or prepare vegetables etc)
2. Trim off the roots and the tips of the spring onion, and cut it into strips (kinda slanted)
3. Peel the skin off the ginger and cut into long fine strips. Put this together with the spring onion, a tip here is you can put some water into the dish/bowl and use the water later.
4. Use the chopping knife to smack (and partially crack) the garlic clove 1-2 times,
and the skin can be easily removed, cut off the bottom part of the
clove and chop it into fine pieces
5. Heat up about a tablespoon of oil in the frying pan (medium fire), and add half of the chopped up garlic in with a pinch of the spring onion/ginger strips, (this will make the oil fragrant) they'll sizzle when the oil is ready to cook the meat, don't leave them sizzling in the pan for too long or they will burn.
6. Before the oil gets too hot, add the chicken slices and stir fry with chopsticks (or a spatula) when the chicken is about 3/4 done (very little pink is showing) add the tablespoonful of teriyaki sauce (or the suggested subsitude) if it is bubbling hot, turn the fire down a little, add the rest of the spring onion/ginger/garlic.
7. Gradually add the water (used for soaking the spring onion in step 3) in -- if you prefer more "sauce" with the dish, and continue to stir fry until everything is cooked. Serve hot with rice! :3
